People quite their sex addiction when they begin to get more rewards for living without the addiction than they get from feeding the addiction.
The Rewards of Sex Addiction
 
Current treatment for sex addiction focuses on the consequences of the destructive sexual activities.  I think, however, that there need to be open discussion about what you get from the addiction that keeps you going back for more.  These are the reasons behind the addiction.
Face it, excessive alcohol consumption and sexual activity provide you with feelings and sensations that you desire and need.
Some of these essential feelings are a sense of being valued, of being a worthwhile person, of being in control, of having your masculinity shored up together with self-esteem and self-worth.  Of course, this all occurs in fantasy, so the gains are illusory.  In the long term, this fantasy world where all of your needs are magically met lead to negative feelings and life outcome.
How to quit sex addiction from it’s roots?  You need to understand the needs that the addiction fulfills.  How does it function in your life?  Then find constructive ways to get those very needs met in the world of human beings.
Once you get used to relying on your addiction, your life begins to revolve around it and indulgence in porn becomes the first place you turn when you are under stress.  You lose any consideration of how sex addiction is damaging you.  You begin to take the rewards it gives you as a given as though you had not other way to obtain them.
No one will give up the benefits and rewards of a sex addiction until they find alternative sources of satisfaction, positive feelings and gratification on which they can rely.
It’s one of the challenges of sex addiction recovery.
